A simple lunch to prepare and also somewhat healthy one to eat, and one that we have from time to time is this.
Simply open a can of salmon and drain it, or use leftover salmon from a previous evening of grilling.
Then chop some red onion, add a bit of chopped bell pepper in green, red or yellow,
and douse with a bit of Zesty dressing or your own homemade oil and vinegar.
If you have the tail end of a head of lettuce left in your crisper drawer, tear off a few pieces and spoon the salmon on top for a perfect lunch.
Go ahead and drizzle a bit more dressing on top.
We were met by a dousing of rain this morning.
Weather.... it's all good, right?
