I cannot say I LOVE beets, but from time to time I do have a few sliced beets (from a jar) on top of my salad.
I've always been curious about what to do with beets if we had them growing in our garden, but as of yet we have not planted any. This recipe from Scott Mcgillivray might just change that next year when we plant.
